Shrimp with Cherry Tomatoes and Feta

One of my new year's resolutions for 2009 is to try to eat healthier and in moderations. It is going to be hard because I love butter, and I add a little butter to almost everything I make. Let's face it - butter makes it taste great!
But I need to make sure I stay fit and be healthy. So once on a while I will post a recipe from my light recipe collections. And I promise they will taste great.

This recipe comes from a book called 12 Best Foods Cookbook, by Dana Jacobi. This simple and quick shrimp dish you can make any night of the week. To keep it light serve it by itself, or to make it more substantial serve it with a small side of whole wheat pasta.
This dish contains of all my favorite ingredients - tomatoes, feta cheese, shrimp and garlic.
{By the way, did you know that feta cheese is the most healthy of all cheeses. It contains about 1/3 less fat that any other cheese like mozzarella or cheddar. Even the light feta tastes great.}



Ingredients:

2 teaspoons extra-virgin olive oil
3/4 pound medium shrimp, shelled
1 clove garlic, minced
1 (12-ounce) bag cherry tomatoes on the vine
1 tablespoon chopped fresh oregano, or 1 teaspoon dried
1/4 cup dry white wine, or fat-free, reduced-sodium chicken broth
3 tablespoons chopped flat-leaf parsley
2 tablespoons crumbled reduced-fat feta cheese
1/2 teaspoon salt
Freshly ground black pepper

Directions:

Heat the oil in a medium skillet over medium-high heat. Add the shrimp and stir with a wooden spoon until they just lose their raw color, 1 to 2 minutes. Add the garlic, tomatoes, oregano, and wine or broth. Cook, using a spoon to roll the tomatoes around, until most of the liquid has boiled off, 1 to 2 minutes. Add the parsley and cheese, and cook 1 minute longer, stirring occasionally. Season with salt and pepper, and serve immediately.
